Se produc în acelaşi timp şi alte substanţe organice. Prin acidul lactic format are loc coagularea laptelui cu formare de coagul omogen, catifelat, cu textură fermă şi gust acrişor."<BR/>Aceasta bacterie se gaseste in numar foarte mare.
